frozen veggies made my meals~~~

This morning's 90 min vinyasa yoga class was amazing, very energizing! After that, I went to Tj's for a quick shop, I just needed some fresh fruit and cottage cheese since last week's several trips to WF filled up my fridge.

Back home almost 2pm starving, although I was snacking Tj's fiber cereal while driving. While I was preparing my quick lunch I had a zucchini muffin, mmmmmmm......... so good!
Lunch was really simple, some aduki rice and stir fry veggies with grilled chicken.
Dessert was fage and pumpkin. Last night I mixed them because I was lazing unfrozing frozen fruits, it turned out to be great! So happy that I found a new simple but yummy dessert.

I went to Pier 1 imports finally, recommended by Kath because I love her bowls and plates so I asked her where she got them and fortunately we have Pier 1 nearby too. I ended up buying two bowls for oatmeal, a square plate and some other little bowls. you'll see them soon. Thanks Kath!!! I loved that place, they have a lot of varieties and they are not so expensive.

Back home I helped my best friend and my future roomie to move her stuffs to my apartment so next friday, the official day for moving won't be tooooooooo long and tooooooooo heavy!~~~

When we finished it was about dinner time. I wasn't sure what I wanted and as it is sunday I don't have excuse to have leftovers. While I was thinking what to prepare for dinner, I had an apple with cottage cheese
I decided to make a lentil soup.
  • 1/2 cup brown lentil
  • 1/2 canned tomatoes
  • 1.5 cup of frozen okra
  • 1 cup mix of corn and peas
  • 1.5 cup of frozen spinach
  • 2 cup vegetable stock
  • S+P
  • gram marsala, cumin, basil, curry powder
it was full of flavor, spicy enough for winter! I have a bowl with 1 tbsp of cottage cheese.
I also had 1/2 red pepper, 1/2 rice tortilla with roasted pepper hummus.
This is one of the new oatmeal bowl (I couldn't wait until tomorrow morning to use it)
And finally dessert was two marroc!!!! yummmmmm.........
Sunny sunday is so enjoyable, specially when you don't have work. Last few days I've been working hard, maybe a little bit stressed. So, the day off is just what I needed to recharge.

That soup looks fantastic. I would never think to put okra in it but it looks delicious!

OOOOO I want lentil soup now!!!! I need to restock on okra!!! I love it!! I need to go shopping for some new bowls/plates too... hehehe...

Recharging relaxing days are the best, I'm long due for one, I'm always stressed and overworked lately

I LOVE a good yogurt and pumpkin combo. So great.

I also love Pier 1 but I haven't been in ages! Great plan going there for dishes, I'll have to remember to check it out soon!
