First of all, thanks to everyone who left sweet and warm comment yesterday. Your words helped me immensely. As you can imagine, I was low after knowing the news and tried my best to keep the positive attitude, and your encouragements really made me feel better. THANK YOU! I did a little research on the topic, as many of you pointed out, a lot of people live a normal life with Diabetes, they just need to be more careful about what they eat. A healthy lifestyle will definitely be a MUST and not a choice for Dad.
Fortunately I had a lot of work to do so I didn't have to think about the issue all day long. I worked about 10 hours, talked less than 10 words during the whole day and had a headache most of the day (woke up at 4am). What a day! Anyway, I am sure I'll be positive soon, I just need some time to digest the news. Bare with me if I don't sound as positive as I've been lately.
Working too much didn't help on creating stellar food.
Breakfast was amazing. Thanks to Krista, I finally tried the famous Flax seed porridge and I love it!!!
It's sooooooo creamy and so filling. I had 1 serv. (1/3 c) with almond milk, 1 tbsp pumpkin, 2 tbsp egg white. Topped with black berries and Cinnamon Swirl PB.
Fabulous combo!
AM snack: pumpkin seeds.
Lunch Salad: another first try. AVOCADO. Can u believe that I've never had it before? I know a lot of people like it, but I don't find it so tasty. However, it has great nutritional values, especially healthy fat. So, I'll definitely have it more often. Salad also contained greens, tomatoes, yellow pepper, alfalfa, edamame, broccoli and mushroom. Dressing: olive + lemon juice.
And 1/2 of oatmeal bagel from Krista.
It was a delicious lunch but didn't hold me for long. After 3 hours, I had the super powerful combo: the other half of the bagel with microwaved egg white.
And then, 3 hours later I had this half blooded orange
Dinner came late (I finished doing a 90 min yoga at home around 8pm): so I fixed the dinner in 15 min. I used 1 cup of homemade tomato sauce, 4 oz. grounded turkey, 1/2 onion, 1 cup of broccoli and some kale to make a sauce over "hair angel".
It was a lot of food, not pretty but delicious.
Dessert: dairy free chocolate pudding. I only used 1/5 package and I wish I had used more.... love it!
