It's freeeeeeezingg here!!!!!

It was so cold in the library that I had to stop studying there. I don't know what happened to me today but I was freezing all day long.
I woke up at 6am and leave home around 7.30am heading to the library to have a good day of work. Before that, breakfast.
  • 1/2 cup oats
  • 1/2 cup oatmeal beverage
  • 1/2 banana
  • 2 tbsp wheat berries
  • vanilla
  • fresh blueberries (last half cup)
It was so sweet!!! I guess it's the artificial sweetener in the oatmeal beverage. I don't think I'll buy them again, I really want to cut artificial sweeteners. And I'm glad that my taste is even less sweet now.
1 packet of BB for morning snack.Unfortunately the library was closed until 10am. grrrrrr....... I remembered that I had an office in campus as well.... so went to the office. Opssssss....I forgot the key!!! grrrrrrrrrr........... But my eager to study didn't stop me there, I went to Stamp Union (student center). As it was 8am in the morning, it was empty, so I found a study spot there. Morning study was good (even though around 11am my feet was almost frozen).
I had the same sandwich as yesterday, but today I ate alone so I took pic with photo booth. Look, it's HUGE loaded with all kinds of veggies, tofu spread and the most incredible homemade WW onion drill bread.

I've seen you guys having dates and wanted to try it for a while. So, it wasn't hard for me to pick the dessert today. I had 5 of them.
these are real goodies!!!!!!!! Why I waited so long to try them. Well, better late than never. eh?
I worked couple of hours more in the library until I was completely frozen so I left, which means I was done with work today. Back home, did more gradings, had a big afternoon snack. (I thought maybe I was freezing because I didn't have enough food)
pumpkin seeds, dry cranberries and more dates.An apple and homemade bread.
I was done at 6pm and was feeling blah....because I felt I didn't work enough today. Yes, I did work for around 7 hours, but not didn't got much progress, so I don't feel accomplished. I knew if I stayed at home and continued with this negative thoughts, I was going to depress. So, before that happened, I went to the gym for a good sweaty workout! And that made me feel accomplished for my day, because I did a 45 min interval on the treadmill without music!!!! Can you imagining that? And then 20 min on the elliptical machine reading Glamour. Back home, warmed finally but starvinggggggg. I heated leftover lentil soup with some broccoli. Also made a quick scrambled egg with tofu, spinach and mushrooms. Seasoned with S+P and nutritional yeast. And 1/4 cup of brown rice.
Very filling and yummy dinner. Maybe it wasn't that yummy, but because I was hungry, I enjoyed a lot.
Dessert was 1/2 cup oatmeal beverage with 1/3 cup Tj's high fiber. (I'm running out of Fage), so the dessert was kind of bland.

sleepy but excited little girl~~~~~~~~~

This will be a quick post because I have to finish up my work before going to bed early. My Daddy will arrive tomorrow morning, I have to be at the airport at 6.30am!

Okay, about food. This morning I had tropical flavor oatmeal..... (a little soupy though)
  • 1/3 pre-made steel cuts
  • 1/3 almond breeze vanilla
  • 1/3 cup of chopped pineapple
  • 1/2 large banana
  • coconut flakes
  • cinnamon
  • 1 tbsp flax meal
  • 1/4 cup cottage cheese
I love the mix of flavor of this combo, the sweetness of banana and citrus of pineapple! so yummy~~~~~
When I finish the bowl, I felt needing something more.....so more citrus....an orange.
I woke up sleepy this morning, so two hours after the breakfast I wasn't awake yet! so second cup of coffee with a bowl of EnjoyLife granola.
Two hours later, still not awake....... more drink and snack
Mate and little cup of pumpkin seeds (new cup! isn't it cute?)
Lunch was baked tofu (marinated with BBQ sauce, S+P, tomatoes paste, gram marsala), 1 poached egg with sauce and some aduki rice with veggies heated together with gram marsala, S+P. Quick, simple but colorful and delicious meal....

Dessert was baked butternut squash with cinnamon
After lunch I went to campus for a lecture and then office hour. (still sleepy!!!)

When I came back I had a chopped apple with 1/4 cottage cheese and 1 slice of Ezekiel with laughing cow!!!

I didn't really need snack but I continued sleepy, so more food to keep me awake. (isn't the other way around? that more food makes you sleepy? )

For dinner, I made a squash oatmeal with 1/3 oats and some baked squash. Sauteed spinach with mushrooms with garlic, S+P and a pinch of soy sauce. Light dinner since I snacked too much during the day and wasn't hungry at all.

But I did need a big and satisfying dessert. 1 fage and 1 cup of raspberries. OH~~~~~~~~~ Love how creamy it is and of course its color!!!

Tomorrow will be a busy day. Pick up my Dad, teach 3 discussion sessions right away, help my friend to buy a bed since she's moving in this weekend......do groceries........and BE with my DADDY~~~~ So excited....and so sleepy!!! Fortunately it's night and I can go to sleep soon~~~


Tomorrow is Halloween!!!!! Can't wait to see what you guys do tomorrow to celebrate it!

sunny cold day but a lot of food!!!!

Last night after so many snacks I didn't have appetite for dinner, although I spent about 2 hours in the kitchen. For dinner I had two turkey meatball with some veggies and 1/3 cup of macaronis.

The two hours in the kitchen was devoted to make tofu "lasagna". in quotes because it's not real lasagna since there's no pasta in it. This is the recipe:
  • 1 very large eggplant

  • salt for sprinkling on eggplant

  • 10 oz frozen chopped spinach, thawed and squeezed dry (or fresh)

  • 1 lb tofu (regular, not silken)

  • 3 tbsp nutritional yeast

  • 2 tsp basil

  • 1 tsp. salt (eliminate if following a salt-free diet)

  • 2 cup homemade tomatoes sauce

  • 1/4 Parmesan cheese

Cut each eggplant lengthwise into very thin, even, 1/4-inch slices. Sprinkle each slice with salt and place it in a colander to drain for 20 minutes. (This will draw out moisture from the eggplant and also make it less bitter.) After 20 minutes, rinse each slice briefly and press with a paper towel to remove all the moisture.

While the eggplant is draining, preheat the oven to 375 degrees. Place the tofu and thawed spinach in the food processor and process briefly. Add the remaining ingredients--except the eggplant and sauce--to the processor and blend until smooth.

Spread a thin layer of the sauce in the bottom of a 8x8-inch pan. Place a layer of eggplant over the sauce, covering the entire bottom of the pan. Spread half of the tofu mixture on the eggplant. Cover with another layer of eggplant and then spread the remaining tofu mixture over it. Top with a final layer of eggplant, and pour the remaining sauce over this and Parmesan cheese. Bake for 30 minutes and you got a NO-pasta lasagna.

I think it's the nutritional yeast that makes the tofu&spinach spread so so good. It will be a perfect spread for sandwich as well.


This morning's oatmeal
  • 1/3 oats
  • 2 tbsp egg white
  • 1/2 large banana
  • 2/3 water (used to soak the oats last night)
  • 1 tbsp vanilla
  • 1 tbsp grounded flaxmeal (homemade)
  • topped with grounded almonds and cinnamon
Accompanied with coffee and kiwi.

My morning was dedicated exclusively to grade midterms (77 midterms!!!) I really dislike this part of teaching. Anyway, back home at 12.30 I was starving. I knew I was going to have tofu-lasagna, but I still need a side dish. I opened the fridge I saw last few cherry tomatoes, mushrooms and spinach, then salad will be. I didn't feel like having raspberry dressing, so, I made my own, called "spicy pumpkin" sauce.
  • 1/4 pumpkin/squash puree
  • 1 tbsp mustard
  • s+P
  • 2 tbsp silk soy milk
  • 1 tbsp water
YUMMMM!!!!! I love its color and taste. Another pumpkin-lover's invention!


Dessert was leftover aduki beans with coconuts and agave nectar. But it was too few to satisfy my dessert appetite. So, 1/2 cup of Fage with cinnamon! SUPER lunch!

pumpkin budding

Ingredients
  • 2 cups of pumpkin puree
  • 2 cups of silk tofu
  • 1 cup of almond breeze original
  • 2 tsp of gelatin powder/agar gar (for vegan version)
  • 1/3 cup agave nectar or any kind of sweetener you have
  • 1 tbsp cinnamon
  • 1/2 tbsp pumpkin spice
Method
1. heat almond breeze and dissolve agave nectar in it
2. hydrate gelatin powder in 2 tbsp of water
3. combine 1 and 2.
4. blend pumpkin with tofu for 2-3 min until you get a smooth mixture.
5. add 3 and blend 1 min more
6. pour the mixture in 3 bowls and freeze for 4-5 hours
7. serve it with peanut/almond butter (optional)
