rescue plan~~~~

okay. It was a nail accident..... look..my nail is too long and too fragile now, I need to go to the manicure ASAP. One of them is actually breaking. I wanted to go to the manicure but when I came home at 7pm , I was too tired too lazy to get out again in a cold rainy night...... So, the rescue plan for the almost broken nail
tatatataaaaaaaaaaaaaa.........
ahhahahha.....it was fun to come up with the plan.

okay. My day was normal. got up pretty early today (5.45am) and had time to prepare a good breakfast, read FT slowly and read some new blogs. I enjoyed so much the extra hour.
Today's combo was
  • 1/2 cup old wessex
  • 1/2 cup almond breeze vanilla
  • 2/3 cup blueberries
  • 1/2 large banana
  • 1/4 cup cottage cheese
  • 1 tbsp flax meal
  • 1 tbsp PB
Isn't is appetizing? I enjoyed so much looking/eating it!
Did some productive reading this morning and had my first homemade trail mix.
roasted almonds, dry cranberries, raisins, roasted pumpkin seeds and H2H.
Lunch
Appetizer: hummus that I made yesterday with 1 can of chickpeas, 1/4 oil, 2 tbps tahini, S+P and cumin. 2 mini pita breads and 4 baby carrots. And the new plate~
Entree: tortilla pizza with zucchinis, mushrooms, broccoli, Tj's grilled chicken, tomato sauce and mozzarella.
Dessert 1: pumpkin+ricotta+cinnamon+PB
Dessert 2: And marroc!
As I was going to spend whole afternoon in campus and a spinning class afterward. I packed an apple and more trail mix as snack. I had it with a decaf with just soy milk (no sweetener!)
Dinner was veggie ricotta pudding, 5 mini pita bread (I love it!), stir-fry romaine lettuce with sesame oil, garlic and mushrooms. It's my first time using sesame oil for stir-fry. usually I use canola oil, but sesame oil gives it a special flavor which is so delicious!

Dessert 1: pumpkin+fage+pom seeds (it's my first time having it, it took me 10 min taking out the seeds. But I must say I don't think I'll buy it again... it's colorful, good looking, but not so tasting!)
Dessert 2: fage+ricotta+cinnamon
Oh......it seems that only one dessert can't satisfy me anymore. What happened to me lately??? I've never been a dessert person!!!

It's monday, I have a lot of work to do but I already began to miss sunday!!! Does anyone feel the same?

The cookie recipe is in the Vegan with a Vengeance cookbook - I used the recipe closely, so I cannot reprint it, unfortunately :-(

that broken nail looks painful!!! ouch.

is saw your question on my blog about the oat flour. oat flour is just ground rolled oats/groats. if you just used the bran, it would make the muffins really heavy. if you don't need to make them gluten free, just sub all the oat flour with whole wheat flour or whole wheat pastry flour.

my stomach's just been aching up so i don't really use whole wheat flour anymore.

hope that helps!

Ahh, I hate when nails break. Your food looks so yummy! :-) Especially the oatmeal. I haven't jumped on the oatmeal bandwagon yet, but I may give it a try soon because I have oats in my cabinet. Hope you had a good weekend. I still haven't had time to go back on your older posts, but I think I'll have time tomorrow. :-D

Yum. I never though of combining ricotta and fage. I will try that asap.

Sorry about the nail, you did a great job protecting it, though. :)

Your poor nail! What a bummer!

you know what a good temporary nail fix is, get some actual nail glue (like the kind of fake nails) and it keeps it together for the time being at least until you can go get a manicure!

I need to try ricotta in other forms it sounds good I've only had it in pasta dishes.

Pumpkin and ricotta cheese. Wow, what a genius idea! That sounds so good, I must try it out!
Hope you can go get a manicure asap!
I miss Sundays as soon as 5:00pm rolls around. I'm serious! Because I feel like as soon as Sunday evening rolls around, I have to start thinking of the week ahead, and that makes me miss the weekend. And I also start looking forward to Saturday starting at 7:00am on Monday. :)
