Noodle day~~~

It's a noodle day and also the last day of my Dad's stay in US. He's going to leave tomorrow morning..... I'm a little sad...but it is okay because I did everything I could to make him happy and proud. If there is nothing to regret, then nothing to be sad about, right?

Okay about today's eats. Breakfast was vegetable buns with sesame powder drink for Dad and for me, of course, oatmeal (what else could be?) Today's combo was
  • 1/3 pre-made steel cuts
  • 1/3 chocolate almond breeze
  • 2 tbsp egg white
  • 2 tbsp wheat berries
  • 2 tbsp cottage cheese
  • 1/3 large banana (I forgot to put it when oats were heating)
  • 1/4 raspberries
  • 1/4 blueberries
I don't have to say much for you to imagining how delicious is this.....mmmmmmmmm........... so yummy~~~~~~~
We went to Chinese embassy to pick up my passport this morning, because I'm going back to China next December and as I'm officially Argentinian, I need a visa to get into China.
Back home, I began to prepare lunch. I wanted to make noodle for Dad because I'm sure he will like the texture of one brand of noodle that we have here. So, I just needed to make the sauce. I used a lot veggies and mushrooms.
  • 4 green chili pepper
  • 2 pieces of garlic
  • 3 small zucchinis
  • 4 large hydrated shitake
  • 1/2 package of fresh mushrooms
  • 1 cup of soy bean sprouts
  • 1 chicken breast
  • 3 small potatoes
  • soy sauce
  • sugar
  • oil
  • sichuan pepper
  • 1 cup of water
  • 3 pieces of fish cake (you can get it from korean store)
First heat the oil and add chili together with garlic and sichuan pepper, let the flavor release. Add potatoes and sliced chicken breast (marinated first in some soy sauce with some ginger powder), stir, cook for 5 min and add the rest of ingredients. Simmer for about 30 min and a spicy, tasty sauce is done!

Noodle is an easy and satisfying dish in winter time. Both of us enjoyed a lot!

I had to go to campus this afternoon for a lecture, Daddy went with me and waited in Stamp Union. It was a rainy day and walking to campus with umbrella isn't fun at all.....but having Daddy besides me.......it wasn't that bad.

Back home, I didn't feel hungry but wanted a snack.... rainy day just need more food. I had an apple with 1/3 cottage cheese.
When I finished actually I began to feel hungry......so I had two small slices of Tj's 5 grains with laughing cow.......
And then, a cup of chocolate almond breeze. I remember mi mentioned once in her blog that it happens to her also that after having apple or other kind of fruit, she actually gets more hungry!!! It's so weird!!!! Does anyone know the reason?
After so many snacks I didn't feel hungry by dinner time. But my dear Savanna was hungry and Dad was indifferent about what to have. So, more noodles!!! For Dad I made him udon noodle (so it's not having two same kind of noodles twice a day) with leftover smoked tofu pasta. For Savanna, the same kind of noodle we had at lunch. And for me, again, kabocha with oats with some noodle sauce.

For dessert, as usual I wanted Fage, but couldn't decide between blueberries or cinnamon. I had both....1/2 fage with 1/2 cup blueberries and 1/2 fage with cinnamon. Can't be more happy!!!! ^_^

Daddy is already sleeping on the coach...... that's his unique way to digest!!! I see him more and more like a big child who needs my care and love!

It's great that you got to spend some quality time with your dad- you obviously care about him a great deal and I'm positive he's proud.

You're right- noodles are Perfect winter comfort food! I followed your lead tonight although made mine a little more stir fry as opposed to soupy.

Have a great night!

I have the same issue with apples. They make me really hungry. I had never heard of anyone else having that problem before... now I feel less strange. :)
