This morning I had to teach three sessions. It was a rainy day, I'd rather stay at home and sleep. But my dear students were waiting for me. Obviously the attendance is lower than usual and I don't blame them. As it was a small group, I had more chat with them than usual. A couple of students were interested in going to grad school, so I gave them advice on what to do from now on and what to expect to find in grad school. Sharing my experience with them reminded me my passion about economics, the main reason for my being here, the reason that encouraged me to live in a country that I had no friend/family, to adapt to a new life style. After reminding me that, my mind was clearer, less stressed, more optimistic, because I'm doing what I do because I wanted to, I chose to. It was my decision to work hard because this is one of my passion in life.
Now back to eats and munchies.
Breakfast combo
- 1/3 cup oats
- 1/3 cup almond breeze vanilla
- 2/3 cup water
- 1/2 banana
- 1 tbsp wheat berries
- 1/4 cup cottage cheese
- 1 tbsp dry cranberries
- 1 tbsp flax meal
Satisfying and filling (I needed it because I didn't have time for snack)
Back home around 12.30pm, I was starving. So first I had a cup of almond breeze and then prepared a quick lunch which included 1/2 steak of baked salmon that I made the other day, stir-fry veggies and shitake and 1/2 cup of rice. I also made a seaweed soup.

As dessert: baked kabocha and a marroc.
I was productive this afternoon in term of reading papers and having snacks. hahha..... munchies come
munchies 1: 1/2 cup 2% fage + 1 tbsp wheat berries + cinnamon
munchies 2: 1 slice of Ezekiel, half with laughing cow, half with PB
munchies 3: 1 big spoon of PB
munchies 4: another slice of Ezekiel with PB
munchies 5: final slice of Ezekiel
You can see that I was craving breads today~~~ I think if I had more Ezekiel, I'd have more.
Obviously after all these munchies, no appetite for dinner again. So, I had the rest of my seaweed soup added some spinach and mushrooms.
For Savanna I made a quesadilla and a veggie bean soup. For the quesadilla I used 1 Tj's rice tortilla, parmesean cheese, mozzarella cheese, spinach and mushroom. For the soup, 1 can of diced tomatoes, 2 cup of frozen veggies, 1 cup black beans, S+P, cumin, cilantro and achiote seasoning of Goya.
She seemed to enjoy them a lot~
Dessert: the rest of Fage with cinnamon.
I have one question for you. I never thought that yogurt had saturated fat until Erin mentioned it to me. Is it bad the saturated fat from Fage? Because I have 2% fage and just realized that it has 15% DV of saturated fat, is it too much?

i am a HUGE lover of kabocha as well! i was just wondering where you buy your kabochas. i buy mine at kmart orrr whole foods but they cost a lot. i was just wondering if you get any deals ;]
also how do you make the wheatberries?

blueskyworld: I buy them in Hmart (korean market), most of time they sell it at cheaper price than WF.
For wheat berries, just boil them in a lot of water until the outer layer begin to break and discharge the remaining water. It takes about 45-60 min depending on quantity.
I definitely have days where I feel like I could eat a loaf of bread!
I don't really know about the yogurt. Sorry.
i love my ezekial, too!! my favorite are the sprouted grain english muffins. i had 2 of those today- soo good.
Hi! About your pesto sauce question, just throw in a handful of your favorite herbs and nuts into a food processor and puree them all in oil and lemon juice till smooth! Stay positive always!
Saturated fat is not bad and we do actually need some of it. As long as you don't exceed your daily requirement a day, it's fine.
I can't remember how to calculate saturated fat but I know that for the average person who eats about 2000 calories a day, we should not exceed 20g.
Just remember to cut down on other sources of saturated fat if you had too much. You typically get saturated fat from protein sources, for example, meat, dairy products.

I wouldn't worry too much about a little bit of saturated fat here and there. You might want to look at the ingredient list to try to deciper which ingredient it is coming from. I didn't realize you were in grad school doing research. I think that is great! Kudos to you.
You teach economics? That's awesome :D I took econ in my first year at university and nearly died from trying to figure out all those graphs --but it's an interesting topic :p

Not sure about your yogurt question, though...
I've never had Ezekiel bread... maybe I should try! I wouldn't worry too much about the sat. fat in Fage. Since it comes naturally from the cow and not some factory, it's gotta be the "ok" kind.
