it's snowing!!!! Perfect weather for baking!

We bought some flowers today. ^_^ Aren't they pretty?
It's finally snowing here in Maryland!!! I've been seeing snows in your guys blog for a couple of weeks already, I'm so glad that I will finally see it here in front of my home too. (although, it means it's going to be freezing too) . But this is the perfect weather to stay at home and do some baking, isn't it?
And this is what I did. I tried two new recipes.
1. Zestycook's homemade bread.
I followed almost his recipe. (I used honey instead of molasses, I used half WW flour and half white flour, I added 1/3 cup of pumpkin seeds, 1/3 cup of sunflower seeds, 1/3 cup of cashew nuts, because Savannah loves nuts!!!). It's my first experience with yeast. I was hesitant to try it until I saw that recipe which is really easy (I also email Cory to ask him some more details, and he was so nice to explain to me and made me feel confident on trying it) and it turned out to be a big success. Look the result:
It has a very crunchy chewy crust and very moisture inside. mmmmmm......... heaven bread! (I guess we might not buy more breads)

2. Chipas. It's a Brazilian cheese bread. When Savannah went to Argentina this year, I took her to a Brazilian restaurant, they served this bread and she loved it immediately and wanted to eat more of it since then. I've promised her to make it, but as I had no idea what is made from, I couldn't satisfy her cravings until today. Finally I got the right ingredient to make it. And the result????? SHE's a happy girl!!!!!!!! ^_^
For 12 chipas
  • 1/3 cup oil
  • 2/3 cup water
  • 1/3 cup milk or soy milk
  • 1 teaspoon salt
  • 2 cups tapioca flour (you can find it in Latin markets)
  • 2 teaspoons minced garlic
  • 2/3 cup Parmesan cheese
  • 2 beaten eggs
  1. Pour oil, water, milk, and salt into a large saucepan, and place over high heat. When the mixture comes to a boil, remove from heat immediately, and stir in tapioca flour and garlic until smooth. Set aside to rest for 10 to 15 minutes.
  2. Stir the cheese and egg into the tapioca mixture until well combined. Form small balls of the mixture onto an ungreased baking sheet.
  3. Bake at 375 F until the tops are lightly browned, 15 to 20 minutes.
It has a really unique texture and great taste..... you guys have to try to make it! It's a perfect appetizer and/or snack.

breakfast combo
  • 1/4 cup multigrain
  • 1/4 cup oat bran
  • 1/2 banana
  • 1/2 cup frozen strawberries
  • 1/2 cup almond breeze chocolate
  • 1 tbsp flax meal
  • 2 tbsp wheat berries
  • 1/4 cup ricotta cheese
  • new Christmas bowl
I don't know why it was a little soupy, but delicious anyway! ^_^
After brekiie, I read some blogs, called my family, ate an orange
reading Erica's blog, look how happy she looks in that photo with her Dad.
We went to costco this morning to buy some chocolates for my family (this is a gift that I'm sure they will like it). Back home, I heated the last portion of chili, added frozen okra, baby spinach and Tj's grilled chicken.Yum yum!!!!! And a pita bread to get some carbs.
Afternoon snack besides of chipas and bread. I had a sammie kind of snack: 1/4 cup ricotta + 1 chopped apple + 1/4 cup Tj's high fibers + cinnamon.mmmmm........ it might not look pretty, but it taste great!!!!
I wasn't very hungry for dinner after the overload of snacks. So I made again pizza-style meal: 2 slices of grits, 2 poached egg while, topped with sauce and mozzarella. Along with some broccoli.
Dessert: some Fage with cinnamon.I'm so satisfy, both my belly and my inner-chef ego. ^_^ I feel specially proud of myself when I succeed on new recipes.
Such a great Saturday~~ whenever my weekend involves baking, it's perfecT!

yeast is my favorite ingredient ever!!! i just love the name haha

when you use honey instead of molasses, is there a really heavy honey flavor? is it still as moist?
