hard monday, great eats!

I've been nervous all day long until 3.40pm when I had the meeting. It wasn't as good as I expected, but not too bad either. I think I've learned to dis-stress myself. As I said last time, when you fall down to the bottom, nothing can be worse, you will rebound eventually. My yoga instructor said something like this yesterday when we were doing head stand. She said: "every time that you're up, you will fall down. And every time you fall down, you'll go up". I'm down now, but I know I'll be up soon. (I will meet another professor this Thursday, hopefully that go better)
okay, something more interesting to talk about. Food
breakfast (similar to yesterday's)
  • 1/2 cup oats
  • 1/2 cup almond breeze
  • 1 big sliced apple
  • 1/4 cup egg white
  • cinnamon + ginger powder
  • 2 tbsp wheat berries
  • 2 tbsp ricotta
  • 1/2 cup blueberries

Love the overloaded bowl of oatmeal. Maybe I should call it fruits with oatmeal.
Morning snack: 2 pieces of homemade bread with cream cheese and crystal ginger chips.Lunch: Tj's meat + sauteed spinach with mushrooms + riceDessert: ricotta cheese with PBAfternoon snack: 1 pita bread + 1 package of Barney Butter + 1 apple
After the meeting I went to a spin class to dis-stress. My stat
Duration: 51 min
Average Heart Rate: 147
Maximum: 170
Calories burned: 333
Dinner: I made milanesa de soja (soy cake). I used to have it in vegan restaurant in Argentina. I don't think there is in US, so I made it. Here's the recipe (4 cakes)
  • 6 oz. cooked soy bean
  • 2 oz. oat bran
  • 2 oz. tapioca flour
  • 2 oz. cornstarch
  • 1/3 medium onion
  • 1 egg
  • S+P
  • 1 tbsp nutritional yeast
Grind soy bean with egg and onions, then add the rest of ingredients. Form cakes and bake for 20 min (flip it once in between). The result
And then I topped it with sauce and mozzarella and bake for 5 min more.
I also made a lentil stew with red lentils, green peas, carrots, onions, diced tomatoes, chicken broth and S+P.
And some roasted broccoli.

It was the perfect dinner for a tough Monday like this. It's really delicious and comforting.
Dessert was another parfait with yogurt, aloe and granola.
I'm going to bed early so I can get some rest. I need energy since I'm planning to do a lot of work tomorrow.

I envy your ability to destress!! But yoga certainly helps. That's a great quote.

I still haven't tried a spin class - sounds like fun though.

Dessert is definitely a comfort for me. Yours looks good - aloe is a great addition!

Glad your meeting is over! Hopefully the rest of the week will make up for todays stresses! That lentil soup looks really great! I need to make some of that!

Sounds like a stressful day, but yes definitely great eats! Your bowl of oats look absolutely delicious!

Woah I missed it - what is the aloe on your dessert?

I am glad the meeting was at least ok. Isn't it funny how yoga teachers know just what to say?

Your ricotta looks like ice cream! :) Have you tried ice cream with oatmeal? It is sooo good.

Sorry the meeting wasn't perfect, but at least it was okay. Your yoga instructor is right... :)

HangryPants: aloe is a fruity gel made with aloe. it's canned.
and yes, I don't know how but my instructor always know what I need to hear in the right moment. She's genius!
