day 12: 3 days is enough!

3 days of waking up at 4am is NOT fun! I'm having a terribly headache now. I don't know if it's a coincidence or not, since the day I knew about my Dad's Diabetes, I couldn't sleep well. And I'm not even thinking or worrying too much of the issue (well.... consciously). Maybe too much work? I've been working >9 hours per day... that doesn't help either. Anyway, this doesn't put me in a great mood for the day, so let's do this post quick. I'll definitely take Melatonin tonight, hope it helps.
Fortunately I had good eats yesterday and more progress on the paper that I'm working on. I'm meeting Carmen this Sunday so I have to finish up all the analysis today (Friday) so I can take Saturday off.
Only two days left for the 4 challengeS... I can't wait to write my thoughts and body reactions to them! Stay tuned!

Breakfast: I wanted to try Wheat Cream that Krista sent me, but only 3 tbsp a serving doesn't seem enough food for me. So I used oat bran too. This combo contains:
  • 1/3 c. oat bran
  • 2 tbsp wheat cream
  • 1 c. almond milk
  • 2 tbsp egg white
  • vanilla/cinnamon
  • topping: black berries, Cinnamon Swirl PB (I'm liking it! ^_^)
The mix of oat bran and wheat cream made this combo especially creamy! Love it! Thanks Krista!!!
AM snack: walnuts and a green apple.Lunch salad: I used Maggie's method to sauteed the veggies a little bit before adding to the greens. In the mix:
  • spring mix
  • 2 Tj's baby beets
  • cherry tomatoes
  • mushrooms
  • orange peppers
  • pan fried tofu
  • avocado (I think I'm liking it, although I don't know if I'd like it if I eat it plain)
  • dressing: olive + lemon + salt
With a whole Vermont muffin (1/2 didn't seem to be enough)I love the warm-cold salad! Such a brilliant idea Maggie!
Dessert: small bowl of mixgranolaPM snack: a blood orange and a bowl of wheat berries/almond milk/pumpkin/cinnamonAfter work, I went to a spin class with only 3 people. But the instructor was so professional that made an amazing class!
Dinner was a good one: grilled fillet + steamed broccoli + bulgur pilaf made with 1/3 c. bulgur, 1 shallot, 1/2 c. frozen green peas, 1 cup chopped kale, Tj's 12 seasoning, S+P. It was so easy to make and delicious!!!Dessert: the so expected double portion of dairy free chocolate pudding. I think I can totally get rid of yogurt with this pudding!~~~To fool my body to get into sleep, I had a slice of WW bread before bed (no pic!), unfortunately it didn't do the trick last night.

You're breakfast looks delicious! It would be nice to automatically wake up at 4 AM...if you wouldn't get exhausted later. I always feel like the day is so much longer and can do much more when I get up early. But it's hard to do when you're tired.

Maybe you have so much going on that your mind doesn't want to shut off at night? That happens to me sometimes, too!

Great idea to combine the 2 cereals! I'll have to try that!!!

ahh coco, get more rest! this past week was better for me, but the week before, i was up at all strange hours and getting about 2 hours of sleep per night! eek not enough!

Stressing definitely makes me lose sleep, too. I try not to work too many hours in a day because it tends to make me feel burned out faster. If you can, take a walk or go do something else to get your mind off work intermittently during the day.

It seems you did have some great food there!!

My dad and sister are diabetic, so I know what you are going through. As a daughter of someone who is diabetic, you just need to check your blood sugar every 6 months. That's what I've done and for me, so far, so good!

Sorry you've had trouble sleeping, that's no fun!

That salad looks so delicious. Beets and avocados are two of my favorite foods! How do you pan fry your tofu? Do you use anything special as far as seasoning? Also, what brand of non-dairy chocolate pudding do you buy?

I think you are right - we are in similar situations at the moment! I completely sympathise with the lack of sleep. And I've also had a constant headache this week because of it! I think my dad's health issues are responsible for the bad sleep - in a weird, indirect kind of way. The same may be true for you - the body is just under more emotional stress/strain and so responds in weird ways... such as making you wake at 4am!

I heard that eating oats before bed is good for encouraging sleep, because of something in them... Maybe that would help?

I'm in love with your lunch salad - that tofu looks so nice and tasty! And I'm impressed with the addition of avocado :-)
