yeah~~ Yesterday was a day of doubles: double baking and double workout. Lovely~~~
Let's start properly. I woke up at 5am yesterday, not so appropriate for a Sunday. But, as my immune system against early bird symptom has improved a lot, it didn't affect me much. Instead I spent time on blog and articles readings. And by 7am I felt like baking. So, I made my first batch of muffins. (Technically, they're blondies since I used pretty much Veggiegirl's recipe, but I don't like cutting and wanted to be easy to carry, so I made them as muffin). This could be called "Peanut Butter mun-dies" (I'm so not-creative). Here's the adapted recipe for these goodies: (9 mini muffins)
- 1 cup regular yogurt (not fat-free)
- 1/2 cup Peanut & Co. smooth operator
- 1/2 cup honey
- 1 cup whole wheat flour
- 1/2 tsp baking powder
- pinch of salt
- 1/2 cup almond milk
- 1/4 cup pine nuts
Method? Easy, mix everything and bake for 35 min on 350F.
You guys could imagine the smell while these goodies were baking????? sooooooooooo good!!!I couldn't resist to try one (still warm). They're perfectly moisturized and just sweet enough for my taste! I love it! I'll definitely make them more often!
Then, breakfast came. I had a BIG bowl of black rice porridge with a beaten egg in it, and dried spicy pumpkin. I knew I was going to have a late lunch, so I ate more than usual.Went to the sunday 90 min vinyasa yoga flow, and the new instructor was a celebrity (I don't know him until some students recognized him) Greg Marzullo, apparently he's a famous dancer in DC area. It was a nice class with a couple of "ninja" poses (Greg words) and I was the only Ninja in class! ^_^
After yoga, I went to do groceries and came home for lunch at 2.30pm! I was starving!!! So, I made a salad with sprouts and baby peppers and leftover chili on a package of Shitake noodles.Very satisfying lunch, followed by one Mun-dies!
I spent afternoon cleaning and cooking for Monday's lunch and made my second batch of muffins. These are inspired my Maggie's oat bran mini scone. I said inspired because I changed the ingredients a lot, the only thing remained was the oat bran. ^.~ For these I used (10 mini muffins)
- 1/2 cup oat bran
- 1 cup oats
- 1 cup almond breeze vanilla
- 1/2 cup egg white
- 1/4 cup Peanut & Co. Wonderful Chocolate
- 2 tbsp cocoa powder
- 1/4 cup honey
- 1/4 goji berries
- 1 tsp baking powder
- pinch of salt
Came home and prepared a nice dinner: baked salmon with onions, sauteed bok choy and 1/2 steamed sweet corns.I enjoyed every bite of it!!! ^_^ A perfect meal MUST end with a perfect dessert: fage + strawberries + wheat berries.Great Sunday, isn't it? I don't have a set daily skin routine, though I know I should. (It's a most days kind of thing, lol). I use a Burt's Bees face cleanser and Burt's Bees blemish stick and love them both!
I use the blemish stick about every night when I wash my makeup off because it's fast and easy, but the cleaner less often. How about you?

I just wash with Oil of Olay cleanser for sensitive skin and then use the Total Effects Moisturizer.

My skin routine....Hmmm....I use an Olay cleanser/toner at night plus moisturizer and St.Ives apricot ex foliating scrub in the morning followed by a Clinique moisturizer....

my skin routine is a lot,for i use shiseido lucent cleanser, la mer whitening toner, shiseido night cream, clinique redness soother, shiseido eye cream. it's alot! especially during winter i add a moisture mask on top of all that

My skin care routine is very smiple, now that my skin is clear (yay macrobiotics!! my skin has not been this clear for about 10 years(. I wash my face with a simple neutrogena face wash, and then I spray an organic toner on. If I'm wearing makeup I put it on (neutrogena liquid concealer and mascara). that's it :)

Catherine: The dry spicy pumpkin is made by my boyfriend's mom. It's delicious but I don't know the recipe. sorry!

Hahah my daily skin routine is just moisturize day and night!! I also make sure I wash my face before I sleep! :) Chicago is SO dry.
SO many fun baked goods!! My problem with baking is that I end up either eating it all myself, or they go bad because I get tired of them. hahaha AND i hate the cleaning up part of it.

Hey girl! I got your comment about the cupcakes. I just used the Pillsbury dark chocolate cake mix and followed the directions on the package.You could use any chocolate cake mix. Then I crushed up Oreos in a ziploc bag and mixed them into the batter...I would use 1 1/2 cups - 2 cups crushed Oreos (it is ok to have big chunks). I baked them for 15-18 minutes and when they cooled I frosted them with canned vanilla frosting and topped with more crushed Oreos. Let me know if you have any other questions.
