Not as planned: work overload!!

Day 2 of the Challenges went well... maybe I didn't even have time to think otherwise??? I didn't plan to work much yesterday because I woke up and still feeling exhausted... I thought giving me a day break! But then, I got an email from a person from Federal Reserve Board about a not submitted application for summer intern. I totally forgot about that because I already got an offer to work on Congressional Budget Office this summer. But the problem was that when I asked Carmen to send letter of recommendations for me, she sent it to all places that I asked her (3-4), so she did that. And FRB got a very strong recommendation on my behalf but they never received additional materials from me like CV, cover letter and dissertation proposal. I guess Carmen's letter was really good so they contacted me anyway to see if I've sent them already. Obviously that caught me by total surprise and I had to work on my dissertation proposal to send it right away (deadline for application was April 1st, so he's doing me a big favor by letting me send it now). So, I worked through all day on that until 8 pm! That's about 10 hours!!! Insane for an already exhausted body! But well... I think I had to do it, even though the chance that they pick me is very low since I told them I've already got an offer. But it's always good to stay in good term with those people.
Anyway. before I move into food, let me post this award that I received from Krista and Emily before I forget again! Sorry ladies, I was bad of not having posted it earlier. Both of them honoured me with a spectacular Bloggers Award. Thank you, Krista and Emily!!! I feel so lucky to have so many wonderful bloggers in my life. This community is so inspirational (both spiritually and culinary) & truly amazing.FRIENDS… comes with the following description to be added & passed along: “These blogs are exceedingly charming. These kind bloggers aim to find and be friends. They are not interested in self-aggrandizement. Our hope is that when the ribbons of these prizes are cut, even more friendships are propagated.” It also says : “Please give more attention to these writers. Deliver this award to eight bloggers who must choose eight more and include this cleverly-written text into the body of their award.”

It's hard to choose 8 people because you are all so amazing!

Now back to food. I was a good girl following challengeS guideline.
Breakfast: A made my first green monster because Krista mentioned that it is helping her on IBS. Simple ingredients since I wanted to have my normal breakfast. So, in the mix: carrots, cucumber, kiwi and spinach.Main breakkie was another bowl of oat bran with pumpkin, coconut milk, egg white with 1 tbsp of Dark Chocolate Dream. And an apple! The BIG feast that hold me until lunch.
Lunch was a salad made with spinach, alfalfa sprouts, mushrooms, orange peppers, baked tofu, tomatoes, sesame seeds and walnuts. Dressing: olive + balsamic.I though that was not cal enough for a meal so I had first 1/2 toasted muffin with 1 tbsp PB. It was so good that I went for the other half 10 min later.PM snack 1: Jelly~~~ No, it's NOT POM jelly!! jajaja...... did I fool you? I know it seems to be POM jelly again, but actually it's made from a berries chai tea!!! yeah~~~ just made tea and add agar powder to it! It was delish~~~PM snack 2: plate of strawberries.Dinner came late and assembled in <15 class="blsp-spelling-error" id="SPELLING_ERROR_12">kabocha + steam green peas and a high-protein scrambled egg with lentils and aduki beans topped with wheatberries.Dessert: black rice porridge with coconut milk! love it~~~ the coconut flavor stood out much more this way than adding to the oatbran. Finally, I ended up my day doing the Dave Farmer's 75 min class recommended by Maggie. (at 11pm) Thank you so much Maggie!!! You know, if it was not because I told you I was going to do it later, I wouldn't have do it. But after I finished, I felt sooooooooo good.... it was so much needed after my long exhausting day of work!! Love the idea of headstand as resting posture! ^_^

Question: Is there anything that you would never give up for your other half (bf or husband)? Or you would give up anything like work, friends, hobbies?

Today's plan:
- day off please!!!

What are you getting your PhD in?

Love the black rice porridge. I don't think I'd ever give up my "me" time completely for anyone. Also, I don't think I could give up reading.

Hang in there with work, girl!!

Thanks for the comment on my blog.
I got my bachelor's degree in economics. I was originally planning on going for a PhD until the math major weed-out course weeded me out. I decided law was a better fit. I do love econometrics though. I worked for a few years for my county assessor's office doing multiple regression analysis to predict property values.
What's your dissertation going to be about?

Thanks for the shout out! Glad to see your tried the green monster out!!! And that salad looks way yummy!

Being a Mom, I have given up many things for my kids and that's A-OK! Now that they're getting older, I'm able to incorporate some me time back into my life...

hi coco!
wow! so much work - i'm so glad, though, that the man from the federal reserve board allowed you to submit an application! how nice :) though i'm sure any sane person would want to give you an extension, especially once they see just how diligently you work and the quality of the work you produce!

hm.. you know, i don't think i'd ever be able to give up anything for my [future] husband. because i'd want him to support me in whatever decisions i make and i'd want him to see that i'll be the happiest i can be and the most content with my life. if we decided to start a family and i chose to retire from my job to stay at home with my kids, then i'd want him to support that. but i don't think i'd give up something for him, unless it involved physically moving away from it. it's tricky. *sigh*. i don't have a husband yet so i don't have to worry, i guess! :)

thanks for the award, coco!! :-)

and i loooove your homemade jelly!

i'm pretty sure i wouldn't give up anything for my other half ... that's why i prefer being single! i can make decisions based just one what i need to do to be happy :-)

good luck with all the work and the apps!

that black rice porridge looks amazing! you seem to be working incredibly hard - you DO need a proper rest, please!

as for things i would never give up... i used to think that i would never give up piano for anyone, but to be honest, there really isn't anything i wouldn't give up for the people i love. but what's more, the people i really love who love me back would never ask me to give up anything that is important to me :)

Thanks for the award & the yoga shoutout :) I am so glad for your friendship.

I'm gonna try that agar + tea idea - it sounds great. And you did the same thing I do with the salads - never filling enough! I always need the bread (but I usually top mine with butter & jelly).

Oh also - I worked at the FRB san francisco for a few months when I first graduated (last year spring). I was a research associate but then I realized that econ wasn't my thing anymore. Good luck with getting everything done for the apps!

Your lunch looks amazingly delicious!! Lately I've been loving walnuts ... yum!

what's your opinion on your breakfast drink? How does it taste? I'm curious to try it, but afraid of a 'grassy' flavor. Thanx!

Gar, Juliet: the smoothie wasn't bad. It was very fresh and lightly sweet even though I didn't add sweetener. If you like a better taste, you can add any kind of milk, banana would be a good addition too. But as I just wanted a green monster and those ingredients are key for the cleansing effect, i just used them.

OH MAN Your eats look so darn good. I totally make your exact same oat bran, but without egg whites. Oooh and I'm a big fan of the salad and toasted muffin!!! that's one of my favorite combo's ever!!!!

Honey, you tricked me with your fake pom jelly! hahahah I told my friend about your POM jelly and agar agar and he got scared because that's what we grow our bacteria on in petri dishes in bio lab. hehehehe :P
