Snow storm- almost productive at home! ^_^

I woke up yesterday morning and everything I saw through the window was white! My first reaction was: Oh...no~ I can't go to my office! geeeee..... How I end up like this? I'm supposed to be happy because I don't have to work. Well.... one disadvantage of being too responsible is not be able to fully enjoy every moment in life! :( I need to work on this issue.
Fortunately my day at home was almost as productive as at the office, worked through almost 9 hs.
Before beginning working with my PJ's I had a lovely breakfast:I used 1/2 c. oat bran, 1/2 c. almond milk, 1/4 c. egg white, vanilla/cinnamon/flax meal, and 1 c. of blended frozen strawberries.Isn't it lovely? And GYG of course!
Lunch: shitake noodles with edadame and chinese pickles all together in the black chicken soup with HALF chiken. And I finished it all!!! I got my daily intake of protein! ^_^ And two Tj's flatbread.Dessert: small bowl of ricotta with cinnamon. (I didn't feel bloated this time)PM snack: an orange and more flax bread.Later, I finished the package. After work, I was feeling tired and uncomfortable with my body. So, I did a 45 min power yoga #1 to continuing with Tina's 31 days yoga challange.
For dinner I prepared eggplant casserole with eggplants, sun dried tomatoes, a mushroom called daily lily according to google dictionary, miso paste, Korean spicy paste, ginger powder and crunshed garlics. It was delicious! I like this creation! The mixe of flavors and color was very appetizing.
some sauteed greens and black rice porridge.Dessert: 1/2 c. fage + frozen strawberries. And before going to bed I had one plain soft wrap tortilla. Question: What is the role of work in your life? How do you balance between your work and your personal life?

And don't forget to give me suggestions about the Exotic Food Challenge. I'm already thinking about the first contest's ingredient. Hint: it might not be extremely exotic but it is vegan. So, Veggiegirl, Maggie, Erin, you don't have excuse to not participate!

all the food looks delicious.

As far as work - I used to bring work home with me and let it consume me because I cared so much. Caring is good, but in order to live a balanced, happy life - I had to learn to leave work at work. It is what I do, but not who I am, so I just try to keep that perspective.

maybe the trick to no bloatedness is small portions! i discovered that dairy makes me break out (wah!!) though so i think i'm gonna still avoid it.

can't wait for the ingredient :)

i work from home, but sometimes i work at night and i feel bad because i would rather be spending time with my sweetie.

You're so brilliant for blending strawberries and putting it on your oat bran!! What exactly does oat bran taste like? And why did you switch to it?

Coco, I totally know what you mean by feeling "too responsbile" you actually feel like you WANT to go to work. Relax a little more, like you said, and enjoy!!!! :) You're too young to be working atll the time! hahaha

seriously i am very impressed by how much you can work! i can only do 2 hours straight at the most.

i'd rather it snow than rain. but it only rains here in san francisco =(

I think your reaction is kinda natural. It's scary when you're so used to routine and working. Work sort of consumes most of my week, but that means I REALLY enjoy my time off. I don't get stressed because I don't take time off that much, so when I do, it's like nothing else matters!

Mmm I love the blended frozen strawberries! Great idea!

I totally hear you on not being able to enjoy every moment because you always feel like you should be working! I need to "work" on that, too.

Blended frozen strawberries... delicious!! I've had frozen strawberries in my oats or cereal a couple times but you sure make it look extra amazing all blended up. I need to do that again soon!
