Weekend recap, recipes and plans!

Hey there! It's Wednesday, workout resting day so I can post!!! Yeah~~~ I feel that everyday I have so much to tell you guys but when I arrive home, I just want to eat and lay on my coach, watch a movie and go to sleep. Like thisMy last post was on Saturday talking about the potential problem with consuming raw spinach. After more research on that issue (in chinese and western websites) I've decided to cut down raw spinach consumption. I might still have green monster but definitely not everyday and probably use kale to see if it tastes as good as spinach. I'm just a very risk averse person and my healthy eating philosophy includes not consume food or the way that it's controversial, because that means there are studies confirming both theories and they're not conclusive.

Recap moment.
Rest of the Saturday: Swimming in the morning and went to a party (food wasn't good, all from costco, so I stuffed myself with guacamole, 1/2 mexican tortilla and watermelon). Then I went to pedicure for the first in my life!!! oh..man, that felt soooo good!
Dinner: a new porridge made with dry corns, quinoa, peanuts, white fungus and oats.

Look the TV tray that I bought. since I eat almost always alone, it's more convenient to eat in front of the TVDessert:Sunday: yoga, groceries and baking.
Breakfast was a nice one: english muffin with an egg cheese omelet (Krista likes it too) with another green monster and Real Simple
Baking time! I made another batch of mini blueberries bundt cake and mini zucchini bread. One mini bundt was my AM snack... it was sooooooo delicious, so moisturized and fresh! :)
Lunch was cleaning fridge kind of saladDessert: I made popsicles with dairy free chocolate pudding! I was soo fun to make and eat!PM: gigantic grapefruit! I've been having one everyday after I come back from work.Dinner: porridge + sauteed veggies 2 kinds'Dessert: KABOCHA!!!

Breakfast: my first overnight oat (1/2 c. oats soaked with almond milk and vanilla) mixed with greek yogurt, blueberries and almond butter! LOVE IT!!!and a green monster

As you can see, June's challenge is going well... I've been using my pantry heavily and spend less on groceries. I'll post a before and after pic of my pantry when June ends.

Now, plans:
  • I am considering to go to a yoga retreat organized by my yoga studio. It's only a weekend long and I know it will be great because all my 3 favorite instructors will go there. But it's pricey, $550 for the weekend, so I'm heasitating.
  • I'll teach a short course (six 3 hours class) when I go to Argentina. I was competing with other visiting professor and yesterday I was informed that they picked my program. I was so excited because it's well paid and because I'll basically teach my dissertation topic. So I'll share my insights about the topic and as I prepare for the classes, it will help on my dissertation as well.
  • I'll prepare a lunch for my friends this weekend!!! My first home party and I'll be the host! It's not a big party, only my best male friends. I'll be feeding 4 hungry boys!!! hahahah... I'm working on the menu! It will so so fun!

Sounds like a busy past few days! All your eats look amazing though, I have yet to try kabocha and every time I see it on here I want some. Cooking for four hungry boys? That should be interesting! I'm sure it'll be tons of fun.

Hey Coco! I hear ya about working a long day, and just wanting to eat and veg out!

I still find your spinach conclusions interesting. Here's a suggestion - when making spinach oats, maybe microwave the spinach for 30 seconds or so first? Would that solve the problem? I guess you can't do that with the green monster though.

Your overnight oats looks delicious - I really want to try that!

And its easy to say what I'm looking forward to - my travels! I'll definately be in your neighbourhood and look forward to meeting you!

I think the yoga retreat sounds wonderful. And it would be good for you too! I think its totally justifiable..

Yeah for posicles!! I like the idea of making fudge-sicles, or at least similar to fudgesicles..clever! I also love your tv try, I need to get one of those.

In my life... well, I'm going to be teaching all summer and that starts in about 2 weeks. I'm also excited because I think we are planning to move back to the east coast soon! Well, within a year, and possibly within a few months. I don't really know details yet but we have been talking about it every day.

Your porridge looks really creamy.
My husband loves his TV tray. I usually prefer to eat at the table with a book when I'm alone though.

Coco-what is white fungus and how do you cook them?Is it used for sweet dishes only? Where do you buy them?

I love how you have kabocha for dessert practically every day. It really is the perfect food isn't it?

Fridge clearing salads are definitely my favourite. HUGE and they do such a great job at clearing out the last bits of things hanging out in the fridge.

I'm soaking wheatberries for the first time in FOREVER right now and I'm super excited about it :)

Rose: those popsicles are really simple: silken tofu, almond milk, flax meal, cocoa powder and stevia, all blended!

Sweta: white fungus can be found in asian stores and you can make sweet and savory dishes with it. First, soak for at least 2 hours and then do whatever you want with it! It is very good for our body! Hope you try it! :)

Sweta: the simplest one is what I make all the time: just white fungus and chinese dates, cooked in slow cooker for 8 hours and sweetened with honey when it's done! :)

yummy yummy yummy... love the new porridge with the fungus and all that :] looks so delicious. omg, can u believe i haven't had oats OR squash in awhile?!?!... gah i'm SOOOOo behind!!! your eats, like always, look so healthy and delicious. it's like 3 in the morning and its making me hungry... i love the tray too :] i have one kinda like that but i just use it for my laptop... hehehe...
